Such a system ensures trouble-free operation owing to a specific burnout-resistant electrode. The unit is resistant to scale formation. This solution guarantees energy savings in comparison to traditional systems using water submerged heaters. A specific system of water dosing in the steam tank.
The system performs continuous measurement of current intensity fed by electrodes, which ensures optimal steam level for dough fermentation. Separating of the steam chamber from the air heating zone guarantees accurate adjustment of both parameters, i.e. humidity and temperature which are crucial for dough rise.
